Migrating away from SBS 2003 - Deploy Windows Server 2008 R2/Exchange 2010

This is my scenario: The parent company is splitting into two smaller companies, both reside at the same location. They will be sharing data between the two domains for the first year, then the second company will be moving into its own office. Small user base of 25 users per company
We ordered two Dell Poweredge R710’s, Windows Server 2008 R2 and Exchange 2010 standard for each company.
The first server has been installed with Windows Server 2008 R2 added to existing domain (DC Promo, GC, DNS).
Exchange and second server have yet to be built, depending on your recommendations.
I was looking into deploying exchange 2010 using HYPER-V on both servers. This way I could move the exchange VHD to its own server when the company out grows the current server implementation.
I am looking for some guidance on how to best decomission SBS 2003, move mailboxes, files etc. What are the pitfalls in setting up this two domain/exchange rollout, if any? Is Hyper-V a good deployment strategy for exchange 2010 in this scenario?

I just finish one of the project migration from sbs2003 to server 2008 and exchange 2007.
you need to do lot og preparation before you do in live server.
i done it first in test enviroment and then hit on the live server I used swing migration notes and it's works perfect.
I done a lot of migration I always used these notes.
for this whole mproject
setup a temp dc
replicate ad to temp dc
build exchange 2003 in tempdc
use forklift for exchange 2003
seize fsmo role on temp dc
join server 2008 on to temp dc
if using same box install exchange 2010
make GC server
move mail boxes and public folders to new server 2008
once all move delete connectors on temp dc
promote server 2008 to primary domain controller
demote temp dc
rmove exchange 2003
that is shortest guidence i can provide
notes consists of 400 pages

detailed is vast. but you should do some search and do test enviroment first. if u get any issue. please post in this forum
