Environnement: Windows Server 2008 R2 + MDT 2010 + Win7x64 Pro
I wonder how I can deploy "Remote Server Administration Tools for Windows 7" only for administrators computers.
Do you have an idea?

Installing it is easy. Its available as an MSU here:
Download it and add it to Packages on your MDT share.
Installing it for only a subset of users might be a little harder. If I remember, you need to go into Windows Features and enable them iin order for them to appear on your Start Menu, you would need to be a local administrator to do that. Following on from that, a user would only have limited rights to view AD if they weren't granted rights to modify things.
If you only wanted certain people to have it, it might be easier to install it via GPO or a software deployment tool like SCCM or Altiris.

You have 2 methods:
1. Add it to the packages node in Deployment workbench
2. As an applications or Run command line (ex: wusa "Windows6.1-KB958830-x64-RefreshPkg.msu" /quiet)
But you will have to enable the feature after the installation with DISM command line:
dism /Online /Enable-Feature /FeatureName:RemoteServerAdministrationTools /FeatureName:RemoteServerAdministrationTools-ServerManager /FeatureName:RemoteServerAdministrationTools-Roles
