What exactly is the point of Redirected Folders?

It allows for central storage of a users desktop or my docs folder (and others)
Central storage means central backup, it also is different to a Roaming Profile in environments where the entire profile is not needed to be moved between machines but it is useful to have documents etc follow the user.

So is it useful to me if I have a server at the office, desktop there connected to the server, and my laptop out of the office. I would be the only user, or is it overkill?

I guess it depends.
I think the real benefit when it was intoduced was that people were saving things to there local computers, which were not backed up, and as i said people who move from desk to desk would not have access to things stored locally on another computer.
So, do you store things in your My Docs on your PC - or do you already store everything on the server?
