SBS 2011 Premium - second Server/SQL Server question

Hi,
Might be a dumb question but here goes.
I have a customer who has an elderly SBS 2003 network and is hosting an SQL database application on the local SQL Server 2000 that was part of the SBS 2003.
He recognizes that it is long overdue for an update so is wanting to embark on an SBS 2011 upgrade/migration whilst this is still available. He doesn't want cloud e-mail so still want's on premise Exchange Server.
However... what he'd like to do is to purchase SBS 2011 Premium software package so that he gets the second Server/SQL Server package...
..and he want's to install the second Server/SQL Server onto new server hardware first, but install into his existing SBS 2003 network and get his database application all checked out *before* undertaking the full migration to the SBS 2011 Server on another new server hardware. Cost reasons, ie not being able to stretch to the purchase of two new server hardwares at the same time also dictates this direction along with being able to fallback to the SQL Server 2000 if needs be if any issues arose with migrating the old SQL application over onto SQL Server 2008.
So, question.. is it possible to install the second Server/SQL Server part of the SBS 2011 Premium package into the old SBS 2003 network first without encountering any installation block's or gotcha's before we embark on the full migration over to SBS 2011 some months later on when funds will permit the purchase of another new server hardware to host the SBS 2011 and testing of SQL database application has completeed sucessfullt on SQL 2008 ?
