P2V a SCCM Sever

Hi
I'm looking to P2V a SCCM Sever. The sever it self is a 2650 so it is old. The size of the drive that is on the server now is 275GB with 187GB being used. I would like to change the size down to 210GB when I P2V it. Also i do not know how the packet share will react while this is being done. Does anyone know of a easy way to do this or any tricks.
I have tried completing this task and after 18 hours it was at 60% and with a transfer rate of 1.22MB.
