Shared printer over network problem

Hi,
I have 2 dot matrix printers (Epson LX-300+II and Epson LX-300+) shared through 2 different PCs to be accessible by the network clients. All PCs use Windows 7 Ultimate.
I have 2 gateway which connect to each other through VPN (remote location - HO and Outlet)
The printers are located in the Outlet, and all users are using Remote Desktop to connect to the applications in HO. I can't use the sharing printer option from the Remote Desktop because when I print, the printer won't print the whole thing sent to the printer. So, I do the "Add Network Printer" on the Server in HO for both printer so in the Devices and Printer window will appear <Printer Name> on <IP Address>.
The next working day (PC always get shut down at the end of the day), one of the printers will be offline on the Server so it's not accessible while it remains online on the local computer where it is connected. I tried to remove the printer and connect it again, but it gives an error "Windows can't connect to printer". I tried restarting the Print Spooling service, and it works. It has been like this for days.
Is there a permanent solution for my problem? so I don't have to keep doing the remove device, restart service, then add the printer routine every morning. It is kind of annoying though.
