I want to check if UAC works on my computer - I am a normal user, and the computer is domain joined. When I open User Account Control Settings window from Control Panel I can see that it is set to: Never notify. As a normal user I cannot check GPO for computer, where I think UAC settings are configured

If "User Account Control Settings" set to 'Never notify', it is actually set to 'Never notify' otherwise you wont be able to open 'Change User Account Control Settings' in the first place as normal user. Since you are able to see 'User Account Control Settings', you are eventually local administrator for that machine.

'Change User Account Control Settings' link in Control Panel require elevation. If you were able to see this setting, being 'Never Notify', you were auto elevated without any prompt.

Here you can see what each setting on slider means for group policy setting.
