Do I need to upgrade my clients to Windows 8 in order to use VDI on Windows Server 2012 Datacentre Edition?
I currently have XP PRO and Win7 clients

You can connect Windows XP client.
The new RemoteFX features in Windows Server 2012 require RDP version 8, this is included in Windows 8 and is also available for Windows 7.
In a mixed environment the XP clients will not have the user experience improving LAN/WAN optimizations that your W8/W7 clients will have. Also the USB support with RDP 8 will work better.
Windows 8 devices with touchscreen (hybrid or RT tablets) can benefit from full multi-touch support with Server 2012.
