you may use the Microsoft Deployment toolkit to customize office and run the installations.

Easy answer: save the customisation file in the Update's foler of your office in a network share and your helpdesk center tech run the setup.exe from the main folder when the user call-in. (the setup.exe use any custom file in the update's folder, like KB too if you need to patch during the setup)
For more advanced deployment please ask in the office deployment's forum (like Dave's told). Like Syed,s told you could use Microsoft Deployment toolkit, altiris maybe, advanced login script, etc....
Just to let it know, where I work they choose option 1 (helpdesk manualy run the setup) because they control the licensing.
