Windows Server 2008 R2 Trial: can I install the trial version twice?

Hi,
I downloaded the trial version of Server 2008 R2 for training purposes. I'm going to be using it inside a virtual machine. Will it be possible to use the same download to install 2 instances of 2008 R2 Enterprise? My train of thought is to have one install with Full GUI and another with just Server Core.
