Where do I go on a server 2008r2 running sql 2008 to verify both windows server licensing and sql licnesing

With the help of slmgr/dlv command you come to know the details of license(retail) and KMS host (volume license).But it won't give complete license key.
I suggest you download belarc advisor tool run it in your machine and know license key details of all products installed in server including OS.

Ah, you didn't mention you were interested in the CALs...
You can use Licensing Manager for the TS/RDS licensing status of the TS/RDS (eg per-user(PU) or per-device(PD), etc)
As for CAL tracking, it depends on the mode you installed, and if you are using PU, there is some dependency on your AD to track by user accounts.SQL CALs..hmm, I don't think it's ever been possible to track those, since there is nothing "configured" nor "installed" for SQL CALs
