I was hoping someone could provide some advice for the best video file size/quality for the server and settings we have.
Windows Server Enterprise
1 TB Storage [just for data]
At our peak usage we hit 4259kb, and we are running on-demand. The server is not heavily used Please let me know if I can provide any more information.

Lots of different possibilities depending on how you want the video to look, what your network can handle, how many clients, etc. I suggest reading through the Windows Media Deployment Guide at http://technet.microsoft.com/en-us/library/cc730848(WS.10).aspx
