clean shutdown state?

Could someone tell me how to do a clean shutdown (and restart) for Exchange, in order to do backups while it is offline, or point me in the direction where I can find documentation on this? I've seen a ton of articles and posts that mention it, but as far as the exact process for doing so I've had difficulty in finding it.

If you dismount a database the the database is in a clean shutdown state.
If you stop the information store service or all Exchange services then you affect all databases at the same time.
Doing offline backups is not recommended.
Why do you want to do this?
