Hi,
If the users still use the temp mailboxes to send/receive emails, you could rebuild the Outlook profile and reconnect.
If the temp mailboxes will be removed, users will use their own new mailboxes, the users should export their own information to the .pst file. And build up the accounts on the Outlook client.

Yep, that's one of the methods. Also you could do it on the server side to merge the mailboxes into currently enabled mailbox. There is a link for your refernece:
Title: Export-Mailbox
URL: http://technet.microsoft.com/en-us/library/aa998579(EXCHG.80).aspx
If there are multiple mailboxes need to be done, it will be a lot of work towards IT admin. So that's why I suggest that you could ask your users to export the info for themselves.

James
