Hi Jatin,
/hosting has no future
And no more updates going to be released my microsoft
http://blogs.technet.com/b/exchange/archive/2011/10/13/future-of-hosting-mode.aspx
My Personal Advice is
Go for Exchange 2010 Sp2
And Segregate the users using Address book Policies
Everything can be acheived on the same
Check for the Guide from Exchange 2003 to Exchange 2010

http://www.migrationwiz.com is the answer to your migration issue.
You should consider planning for the future when E15 gets released, and how you intend to continue charging for a product that likely won't be upgradeable. Just because you CAN host Exchange, doesn't necessarily mean you should if price is the only driving factor. If the per user costs for a Control Panel suite are to much, you should consider developing it yourself.
