Moving an exchange 2003 cluster to a new exchange setup almost 1 TB in size

  Hi, I have been given the task to come out with a solution for our company that is moving assets from one country to another.
  
  Currently we have a clustered exchange server 2003 with 3500 mailboxes (total: 710 gigabytes). With a 3TB vault.
  
  Our datacenter provides services to 9 branches in the same country. However at the end the exchange cluster will be located in a hosting provider in another country and then those 9 branches+main office will access the hosting provider over the internet+vpn or maybe over an MPLS connection.
  We must provide access to those 9 branches to the new datacenter when were done
  I have the need to move this beast from one country to another and i would like to ask some guidances as to where to start. Im kind of clueless on this one and I know that there are many things involved on this.
  
  Questions that arise so far:
  1- how much bandwidth should I need for each branch? my biggest branch has 2000 mailboxes and my smalles has 34. How do I calculate the desired bandwidth? how much does exchange consume?
  2- the owners of the company are thinking about replacing the current hardware with a bigger one so new services can be implemented. However if the choose to buy new equipment and tell us to set it up in the new datacenter they will also tell us to "move/migrate/copy" the existing data over the new datacenter so things go as smooth as possible.
  2.1 Are there any means to provide such "move/migrate/copy" scenario from one datacenter to another? in realtime? almost a Terabyte? So I can minimize downtime?
  3- The owner (a very IT oriented person) is also thinking to move it to Exchange Server 2007 if that helps (but we preffer to stick to 2003 for knowledge reasons)
  
  This are my questions so far, as I said, I new in this "movement" scenario and I would like some advice from the users of this forum.
