Once Office 2007 is installed, and you want to modify the installation, you can actually make a customization MSP for it and run it with Msiexec.exe command lines to remove features such as Infopath or Word or other apps.
To do this, simply use setup.exe /admin to launch the Office Customization Tool (This needs VL copy of Office. Retail copies dont have this)
Once the OCT comes up, select the Feature Installation States page from the left pane. Expand the Office 2007 top level feature, and only choose Infopath to be "Not Available" (A red X will come up against it). Leave everything else at the default states.
Save your MSP to whatever location you want, preferably a network share. After this run
msiexec.exe /p <path to your saved MSP> /qn
This will run your patch silently and uninstall the Infopath feature.
