The only thing I need to mount ISO files for are to get updated boot.wim files out for my USB thumb drive. I boot to WinPE with that rather than via WDS on the network. It's much faster for me. However, I don't actually mount the ISO file. I just use WinRAR, which can open the ISO just like a ZIP or any other archive, which allows me to simply copy the boot.wim file out. Simple! If your need is similar, just download WinRAR.
The ISO files are created along with the boot wims during a deployment share update within MDT. However, to get it to generate the ISO files, you need to put a check in the box in the deployment share properties for the x86 and/or x64 tab.
I guess I don't understand what it is you want. The boot.wim that is on the ISO under sources should be identical to the LiteTouch_x86.wim that is generated at the same time. I use both - I mount the ISO in a VM to boot under VMware, and I copy the Litetouch_x86.wim to Sources\boot.wim on my flash drive - I don't see any difference?
