Hi,
You didn't mention which version. I really find the Exchange help to be the best learning tool however I have been using Exchange for a long time. For a quick and handy book I would suggest the admin pocket guide.
If you really want to learn Exchange download the trial of Windows and Exchange and setup some VM's running it and work through what you are reading in the VM.

I would start with technet and technet virtual lab. You can also download the software in your own lab.- Propus ca răspuns de Peddy1st 29 iunie 2012 21:36

What version?
Otherwise, for STEP BY STEP:
If Exchange 2010, I would use the MS press book for the 70-622 exam (lots of step-by-step and exercises):
It's a good book but if you really want to pass the exam (probably not your objective, at least not yet), you would need other materials.
Another good source for people new to Exchange (though quite a bit more expensive) is the Train Signal series on Exchange:
http://www.trainsignal.com/Exchange-Server-2010-Training-Videos.aspx
Otherwise, as others have suggested, nothing beats the hands-on experience of a lab. You can follow the step-by-step in the sources above in your lab.
For Exchange 2007, the previous versions of the sources above. For the book, that would be exam 70-236.
Please mark as helpful if you find my contribution useful or as an answer if it does answer your question. That will encourage me - and others - to take time out to help you.
