I am running VPC on a 64 bit i920 with 12 gig of memory on win7 pro.

If I run two xpmode's at the same time with a cpu intensive program such as prime95, they both run on the same core.

Most of the comparison articles I saw in the past stated that they would run on seperate threads.  Is it possible to get the two (or more) vps's to run on different cores?

Windows VPC will only use one core, regardless the number of VMs and/or cores.
Per threading, VPC should spin off other things like networking overhead to a separate thread.

If you have an XP license, you can try using VirtualBox:

    https://www.virtualbox.org/

    It supports multiple cores.
