I am preparing a LAB for Exchange Server on Hyper-v with 4 VMS. Can I install Windows 2008 on one VM and copy its VHD to another folder and create a VM with that ? Idea is I dont want to waste my time installing windows 2008 on another 3 machines what will be the best way to do achieve this.

Yes, you can do it. You can create a Windows Server 2008 virtual machine, configure some settings you want, you can also install some needed applications, then sysprep the virtual machine, make it as a base VHD file.
