MIgration from E2K7 SP3 to E2K10 SP2 - what about MS Dynamics CRM?

Moving an organization from Exchange E2K3 or E2K7 to E2K10 can be challenging enough even when there are only Exchange aspects to deal with.
What about an organization that uses a CRM product like MS Dynamics CRM?
I've started to look at this and it looks like on the CRM side, you have to "point" the program to the new Exchange server:

Has anyone performed an Exchange E2K7 to E2K10 transition involving Dynamics CRM?
How complex is this process?
Is it simply a matter of changing a "pointer" or a couple of settings?
Is there any documentation that you could recommend?
