According to this list: http://technet.microsoft.com/en-us/library/cc261687.aspx#ChooseWhatProtect
a list item or document will not be included in a Sharepoint Backup?
I has always understand that performing a full backup on a farm, would include all content as well?
Am i wrong, or have i misunderstood the above list?

I am not the biggest expert with SharePoint Backup but the table seems correct. I know that with granular backup (http://blogs.msdn.com/b/russmax/archive/2009/10/21/sharepoint-2010-granular-backup-restore-part-1.aspx) it is easier to restore lists and libraries. You only have to export the whole lists/library to extract one item.

Hi,
This is very strange about the list mentioned, but I have done a number of backup and restore not only by using OOB methods but by different tools as well like DOCAve of AvePoint. But even if I talk about OOB method, like database migration or Farm backup or even just the site collection backup, it does include all data of the list/document library. Using 'Save List as a Template' or 'Save document library as a Template' also works, but there is a limitation of the template's size upto 50MB. But otherwise, backup and restore does works for item level as well.
Hope this helps.
