Another tool I like to use is the Orchestration Profiler. Although there is no release for 2010 yet a couple of configuration changes will get it working.
I would be very happy see what those changes are. For code coverage it would be nice to such tooling with BizTalk 2010.

Can I suggest you two more tools ?
PowerShell Provider for BizTalk : http://psbiztalk.codeplex.com/, a great tool for IT to deploy and manage BizTalk through powershell.
And a tools like BizUnit :
WFTestDesign - wftestdesign.codeplex.com
This tools allow you to describe your test with the workflow foundation designer in Visual Studio. But for now, it's in beta and do less than BizUnit but give a User Interface to describe the test. I currently try to work again on this project to give it more functionnality.
If you want to add these tools on you list or just say what you're thinking about these tools.
