I currently use a Mac Mini with OS Yosemite 10.10.2 to remote into my Windows 7 computer at work. Is it possible to use both of my monitors when in a remote session? My version of Microsoft Remote Desktop is 8.0.15.

Hi,
If your work PC is Windows 7 Enterprise/Ultimate then it should work. I've not tested this configuration with a Mac as the client, but I know it works from a Windows PC client.

You can try to use the URI scheme and verify result.
use multimon:i:<value>
