SBS creates the users in a special OU. You will not see the users in the normal Users.
As this is SBS you should do all user creation through the management console.
With Exchange 2007, user mailbox management is done through EMC. If you want to create users and mailbox in one hit, use the SBS management console. Otherwise you will need to use EMC, and then make additional mailboxes.
X400 addresses will not appear in an SBS based environment. You wouldn't always see an email address for the local domain if the server was setup with the wizards. Depends if the domain has been added to the Accepted Domain and EMail Address Policy.
Nothing unusual with your setup, it is just you aren't seeing what you are expecting based on knowledge of the 2003 era product.
