Is there any templates to use to cover everything for a coprorate email policy, and how to configure it to MS best practice in exchnage? Or your own tips on what to include in the email policy to cover everything?

This book is a bit dated, but I have used it in the past. Given the price for a used copy, it's probably still worth it. http://www.amazon.com/Policy-Computer-mail-Internet-Guidelines/dp/0814479960

I'd focus on an electronic appropriate use policy which incorporates email usage rather than an email policy exclusively. And of course, have your lawyer look at it.
