Question

Hello,
We rolled out server 2019 in our environment recently and most of our Domain Controllers will not update. Is there a settings or configuration that we need to turn on for this? Thank you.

What happens when you try? WSUS or windows update? Might also try;
sfc /scannow
dism /online /cleanup-image /restorehealth

Hi,
Have you enabled WSUS?
WSUS enables administrators to manage the distribution of updates and hotfixes released for Microsoft products to computers in a corporate environment. It is necessary to select the related role in Server Manager.
Please refer to the following link for details:

Hope above information can help you.

Hello,
No yet solved, we have WSUS but all servers won't even show up but all workstations are. Any idea?

If you have WSUS, then it's either your policies or your linking that's off (Don't forget, Domain Controllers have their own OU).
Here's part 4 of my blog series that deals with the policies - part 5 deals with the linking, but I'd also recommend reading it from part 1 as it contains valuable information along the way.
Feel free to read the rest of the site and other guides.
Also another that would be good to look at - https://www.ajtek.ca/wsus/client-machines-not-reporting-to-wsus-properly/
