Can you still access your Gmail account in a web browser using the updated password?
May I know how did you try to configure your Gmail account in Outlook 2016? Via IMAP protocol or via POP3 protocol? You may have a look at the following Microsoft KB article and make sure you have followed the correct steps and used the correct settings
when configure Gmail in Outlook:

Besides, Google turned off Basic Authentication by default for all new accounts and accounts which haven’t synced within the last 30 days. This could result in the password prompting issue you are encountering.
To solve this, you must re-enable Basic Authentication for Outlook in your Google Account Settings. This can be done via the “Allow less secure
apps” page where you set it to “Enable”.
