when should I ideally configure pxe on the SCCM 2012 server during a migration scenario, before or after running the migration jobs?
the thing is that I'd like to keep the 2007 server responsible for PXE, until I define when the 2012 server is ready

It depends ... didn't you already answer your own question: "keep the 2007 server responsible for PXE, until I define when the 2012 server is ready"?
It's not just a matter of enabling PXE. The PXE server will not be able to answer any PXE request before DHCP settings or IPhelpers are also changed.Torsten Meringer | http://www.mssccmfaq.de
