    I have 2 domains that are untrusted.

    DomainA  has my single primary site with following roles installed on two servers:  MP, DP, SUP.  I now have a request to put SCCM in DomainB for purpose of Software Updates.  The docs say I can install site roles onto untrusted forest server, but I am limited to only one active SUP in the whole site.  So my question is, in order to get a SUP in the second untrusted forest, can I create a secondary site in DomainA, with no roles installed, then setup server in Domain B and install the necessary roles (MP, DP, SUP)?

    No, secondary sites cannot be in untrusted domains. If you can wait until SP1 is released, it supports multiple active SUPs within a site which addresses you scenario. If you can't wait, then there isn't really a good solution, except ... wait for SP1.
