Recently, we've received several threads about Outlook search issues. As mentioned in the link shared by Robert above, we've confirmed that this is a known issue with the March Update for the Current Channel (Version 1702 (Build 7870.2020) or later)
of Outlook 2016 for people that are using an Office 365 installation.
So if this is also the case for you - The current workaround is to revert to an old build (e.g. I have tried to revert to 16.0.7571.2109 which is the January 4 release, instant search was recovered.):

Microsoft is actively investigating this issue but no release date for a fix could be provided at this point. We will keep you updated on this.
