Can somebody confirm if this feature works on a user mailbox? I'm fully aware of the Set-calendarprocessing cmdlet which is available for resource mailbox, is the option related to this? If yes then does this mean its only available to resource mailbox as well?

You cant change the automateprocessing for a user mailbox with that command, no.
You can set for a user via Outlook/Options/Calendar however

You cant change the automateprocessing for a user mailbox with that command, no.

Just as Andy said, you can set this feature via clicking File > Options > Calendar in Outlook client.
