Current SCCM Environment: SCCM 2012 RTM
New SCCM Environment: SCCM 2012 CU3
Currently, all of the clients installed on computers point to the old environment. What i would like to know if what is the best way to switch to the new environment?

Use a script to change the Site Code to existing clients to point to the CU3 server. You can use the RTM server to deploy the script, or use a startup script, etc. Then upgrade clients to CU3. :-)
