That is a project in itself and it would take paragraphs (or pages) to describe all the necessary steps.
At a minimum, you will have to:
Mailbox Role: migrate mailboxes to new server.
Client Access: probably adjust DNS records and CAS Urls
Hub Transport: adjust Send and Receive Connectors (there are some properties to verify here).
But I would second the suggestion of The Grim: with Exchange 2010 (extended) support ending in 2020, you might as well migrate to either Exchange 2013 (maybe 2016... but it just was released) or simply Office 365.
How large is your environment? How many users?

Hi,
In general, you need to consider mail routing ,Public folders ,OWA, Outlook Anywhere, etc.
I will provide some useful links for your reference.
Deploy Exchange 2010:
https://technet.microsoft.com/en-us/library/dd351084(v=exchg.141).aspx
Move mailbox in a single forest:
https://technet.microsoft.com/en-us/library/bb124495(v=exchg.141).aspx
Move public folder from one server to another server:
https://technet.microsoft.com/en-us/library/bb331970(v=exchg.141).aspx
Remove Exchange 2010:
Hope it’s helpful to you.
Regards,
David

Hello Baklawha -
When installing Exchange in an environment the install will probe the local DNS for current Exchange environments.
You can install the new exchange as a dependent of the old exchange and migrate mailboxes to the new server.
But i would recommend if you are going to purchase exchange you upgrade to Exchange 2013 or speak with a Microsoft Representative about Office 365 cloud services.
Best Wishes,
