Hello,
We have a default domain policy which among other things has Domain Profile Settings > Firewall state set to OFF.
I'd like to set Firewall state to ON for one particular server. If I create a separate GPO for this server with firewall enabled, will it take a precedence?

yes, if you link it while keeping the defaults, it will, especially if you link it at OU and not at domain level.
