List of Subsites

Question
-
We use SharePoint foundation as a project site management tool. We create sub sites for each project. I am looking for a way to display those sites as a table of contents instead of just in the left hand quick launch menu or long list. Ideally it would be nice to have a site automatically added when created or removed when deleted.
Thanks for your help!
