Yes this can be done based off my experience. We ran the exact same thing for a few years at my company where I had all my clients on Office 2003 but had hosted email that required Outlook 2007. You just install the Outlook version you want and
then configure email and it works fine. You will loose some integration features with word in your Outlook client like real time spell check but over all it works great. Good luck
