Is it possible to upgrade from SCCM 2012 Service Pack 1 beta or maybe setup a version in parallel to take over agents of the beta version? Thanks.

I would setup a new environment in parallel and migrate the clients to that Configuration Manager Site instead.Regards,

Just install the client from your productive site. It *might* uninstall / install beta or RC ones.
