    I'd like to clean up some earlier tests and I don't know how!

    You'll find all scripts for this in <BizTalk>\SDK\Samples\Admin\WMI folder.
     
    You can see how using this scripts in the Setup.bat and Cleanup.bat files in the SDK\Samples

    Also, within the BizTalk Explorer in Visual Studio, there is an Undeploy option on the context menu for items shown in the Assemblies folder.
