In Exchange 2003 are there any recommended tools or utilities to recover deleted email from a live Exchange store to a pst or alternate mailbox? This can be done through Outlook or OWA to the user maibox, but I do not see a way to redirect the email to an alternate location.
You can recover deleted mails from mailbox database provided that you have Retention period on.
if the mail was deleted within retention period then you can recover same via outlook see below

In case the mail was deleted and if it crossed the retention period then you will have to use Recovery Storage Group to restore mailbox database and exmerge the mails to pst
