First of all, Virtual PC 6.0.192.0 (2007 SP1) is the previous version of Microsoft Virtual Machine program and its fully support Windows XP and Vista, that’s why there is no problem when you use it on Vista Ultimate. Please notice Windows 7 Professional is not in the Supported Operating Systems list:

Actually, Windows 7 has an updated version of Virtual Machine feature which named “Windows Virtual PC”, you can consider upgrade to it. I’ve attached the related URLs for your reference. You should check if your PC can run Windows XP Mode first.

In Virtual PC, you can view Windows XP Mode in full screen by click Action button from the top menu and select 'View Full Screen' which is very convenient.
Currently, I use Windows Virtual PC and XP Mode in my 64 bit Windows 7 without any problem yet.
If you want to troubleshoot the issue first, you can consider the following steps and it did work for some similar issues:

1. Shut down Virtual PC after shutting down any running virtual machines.
2. Open Windows Explorer.
3. Type %AppData% in the address bar and press Enter.
4. Navigate to the path Roaming\Microsoft\Virtual PC under the %AppData% folder.
5. Locate the file Options.xml in the above folder and delete it.
6. Restart Virtual PC and the misbehaving virtual machine and note that the Escape, Tab and other keys are now working.
NB: The issue will occasionally reappear requiring the above process to be repeated. Needless to say, that is irritating.
