How does one increase the Exchange mailbox size limit from the 2GB default.

increase mail box database size from default
check this MS kb article
http://support.microsoft.com/kb/828070/en-gb
increase indivdual mail box size. you have to remove restriction from size.
properties on first storage group, go to limites and untick on storge limit.

You did not indicate if you wanted to do this globally (for all users), or individually (for specific users) which is what I would recommend the latter:
