I had the same problem, Office 2010 SP1 failing with Error Code 78F - both through Windows Update and when installing from a manual download.
Microsoft have (at last, on 29 July 2011) released a hotfix for this to "decrease installation failures for updates installed on Microsoft Office 2010"... sadly, they've not included it in Windows Updates yet... no surprise really.
For those of you that get the Code 78F error (or any other error) when installing Office 2010 SP1, try installing the hotfix for your version of Office 2010.
Some of us wasted a lot of time trying to install this service pack for Microsoft Office 2010....
I hope this helps someone else avoid wasting their time.

For future reference: Here is a link where we try to break down the basic steps for upgrading, downloading, and dealing with trouble shooting.
Some issues to consider would be try running the product configuration manually, restart the server, and checking the error logs.

We tried to install Microsoft Office 2010 Service Pack 1, the service tech encountered error status 1603. What is this code means?
The systems: Windows 7 Ultimate, 64 bits, SP 1.
Application: Microsoft Office Professional Plus 2010. Office 16, Office Pro Plus - KMS Client Edition.
The Microsoft Office 2010 Serice Pack 1 64 bits (KB2460049) was download online.
Run EventVWR - Windows Log - Application = error status 1603.
But that does not make any sense at all. We did not open any folder and do anything. Just start installation after downloaded the Service Pack 1 online. Click start. That was it. Then, the Microsoft Office 2010 Service Pack 1 stopped and came back as error 1603.
That sounds like Mircosoft programming error?
