I have several users who I've deleted from Active Directory. Their mailboxes apparently do not automatically get deleted from Exchange when you delete the user. When I rt. click the user's mailbox in Exchange, everything is grayed out. How can I delete the mailbox after the user has been deleted?

Don't. Just leave it all alone. There is "Deleted Mailbox Retention" which is there to protect you from yourself. You can also change the deletion count retention to 1 /2 days and wait for the scheduled maintenance to complete which would purge the mailboxes
